This overnight blended oat is different than your traditional overnight oats. It is made with blended oats. By blending rolled oats you are creating your very own oat flour, you will get a smooth base with a luxurious and creamy texture.

With added pumpkin puree (Homemade recipe) and pumpkin pie spice, you will experience an explosion of fall flavors on every site.

The recipe listed below is the perfect single serving. You can make as many jars of them as you need for a busy week.

I love setting out 5 mason jars on the kitchen counter. Start by adding the listed ingredients in each jar, close the lids, shake them up and store in the fridge.
All you need in the morning is to heat it up or enjoy it cold.

Ingredients For Pumpkin Pie Blended Oats

Pumpkin Puree: You can either use homemade (recipe here) or store-bought. Make sure it is pumpkin puree, not pumpkin pie puree. There should be only one ingredient in the can.

Oat Flour: You can use store-bought or make your own by blending rolled oats in a high-speed blender using this recipe here. It is easy to make and so much cheaper than store-bought. There are so many other ways to use oat flour so you can make a big batch and save it in an air tight container.

Maple Syrup is optional. Just a little touch of sweetness will take the fall flavor up a notch.

Pea Protein Powder is also optional. I love adding a scoop or two of vanilla or plain pea protein powder to give my mornings an extra boost (you can use code “SHUANGY15” to get discount on my favorite vegan powder).

Milk of Choice: You can use regular milk or your favorite dairy-free milk to make it vegan freidnly.

Pumpkin Pie Spice combines all the warm spices. You can simply make your own with this recipe here.

Dark Chocolate of your choice: This is also optional. I love melting dark chocolate and spread across the top of the oatmeal to make a chocolate shell.

Easy Preparation for These Overnight Oats

Then let it sit overnight! If you prefer to serve it warm, you will need to omit the last step of pouring the melted chocolate over.

Customize it To Keep Breakfast Interesting

Ingredients

Overnight Oats Layer

Chocolate Layer

  • 1/4 cup dark chocolate
  • 2 tbsp Coconut oil, or almond butter, Optional
  • 2 tbsp crushed graham cracker, For Topping, Optional

Instructions 

  • In a jar, mix together oat flour, chocolate pea protein, peanut butter, date caramel and milk. Stir until no clumps left.
    1/3 cup Oat Flour, 3/4 cup Milk of your choice
  • Pour the mixture into a small bowl.
  • Add a layer of date caramel and 2 tbsp of peanut butter (adjust the amount to your liking)
    1/4 cup pumpkin puree
  • In a microwave safe bowl, melt chocolate chips and 2 tbsp of peanut butter together for 30 seconds. Stir then microwave another 10 – 15 seconds if needed.
    1/4 cup dark chocolate, 2 tbsp Coconut oil
  • Spread the melted chocolate across the top of the peanut butter layer. Add a few peanuts and sprinkle of sea salt on top.
  • Refrigerate overnight and enjoy.

Notes

*You can also blend rolled oats in a high-speed blender until you reach a fine powder.
** I like using Vanilla pea protein powder.
*** Mix Nut butter or coconut oil in with the chocolate help soften the chocolate a bit after refrigerating overnight (but it is totally optional)
