This is the coziest breakfast to wake up to. The sweet date caramel paired with crunchy and tart apples, all mixed together in a jar of creamy and thick blended overnight oats. Even more dreamy? It is wrapped in a dark chocolate shell and pieces of pecans on top which elevate the texture to a different level.

I am all about low-effort breakfast on busy mornings. Overnight oats are one of my favorites to prep. Because it is so easy to make and versatile. You can easily customize it to any flavor you like.

Apple picking is one of my family’s favorite activities in the fall! And we have more than enough apples stocked up.

Ingredients for Caramel Apple Overnight Oats

Oats are the base ingredients and you can either use rolled oats or oat flour. You can b

Dairy Free Milk- I love using canned coconut milk, but you can truly use whatever you like best!

Apple Pie Spice– whether you choose to make your own like my linked recipe or buy it from the store- you’ll be able to add this to so many more recipes!

Date Caramel– Not only is this sweet and delicious- it only requires 3 ingredients and is SO simple to make!

Pea Protein powder is optional to give this breakfast recipe a little boost.

Melt Dark chocolate and coconut oil to create that decadent chocolate shell. It adds richness and sweetness, and also helps to keep the oats moist and fresh.

Yes, if you have a chocolate shell on top of the oats, you do not need to seal the containers.

How to Make Caramel Apple Blended Oats

Depending on the type of milk, protein powder or caramel/syrup you choose to use, the consistency of the blended oats may vary at this step.

If they appear to be very thick, add additional 2 tablespoon of milk at a time, stir and add more if needed.

If the texture appears to be very thin and runny. You can microwave it for 30 seconds or just let it sit for 10 minutes or so before adding the chocolate shell. The oats and pea protein powder both absorb liquid fairly quickly. So the texture will be come thicker overnight.

Now we have the oat base, let’s assemble with the chocolate on top.

Variations For Overnight Blended Oats

Batch Making– You can always make this in bulk for the week so it is ready to go on busy mornings! You can fill up half a dozen weck jars, mason jars, or containers in your preferred serving size with these overnight oats. And they can be stored in the refrigerator for up to a week. Perfect for those busy school mornings

Customize the flavors – by adding chocolate protein powder like this Snickers Overnight Oats, smash in some fresh or frozen berries or keep it simple with some vanilla protein powder.

Ingredients

Overnight Oats Layer

  • 1/3 cup Oat Flour, *
  • 1/4 cup vanilla vegan protein, Optional
  • 3/4 cup Milk of your choice
  • 1 cup Chopped Apples
  • 2-3 tbsp Date Caramel, or Date Syrup
  • 2 tsp Apple Pie Spice

Middle Layer

  • 2 tbsp Date Caramel, Optional

Chocolate Layer

Instructions 

  • In a jar, mix together oat flour, pea protein powder (if using any), date caramel, apple pie spice, and milk. Stir until no clumps left.
    1/3 cup Oat Flour, 1/4 cup vanilla vegan protein, 3/4 cup Milk of your choice, 2 tbsp Date Caramel
  • Stir in the chopped apples. The texture should be creamy and thick but still runny. If too thick, like a dough texture, add additional 2 tablespoon of milk at a time, stir and add more if needed. The mixture will thicken more overnight.
  • Pour the mixture into a small bowl.
  • Add a layer of date caramel if using. (Adjust the amount to your liking)
    1 cup Chopped Apples, 2-3 tbsp Date Caramel
  • In a microwave safe bowl, melt chocolate chips and 2 tbsp of coconut oil together for 30 seconds. Stir then microwave another 10 – 15 seconds if needed.
    1/4 cup dark chocolate, 2 tbsp Coconut oil
  • Spread the melted chocolate across the top of the oat base. Add a few crushed pecan pieces and sprinkle of sea salt on top.
  • Refrigerate overnight and enjoy.

Notes

*You can also blend rolled oats in a high-speed blender until you reach a fine powder.
** I like using vanilla pea protein which adds additional flavor and sweetness. You can omit this ingredient if not available to you.
*** Mix coconut oil in with the chocolate help soften the chocolate after refrigerating overnight.
