This recipe is too easy to make, you won’t want to pass it on. All you need is one blender, there is no heating over the stove involved.
Medjool dates are dried dates that have a deep sweetness. Because when the dates go from fresh to dry, their sweetness becomes much more concentrated.
They usually taste a lot like caramel with notes of toffee.
I love using dates as the only sweetener in my no-bake treats. Since the texture of Medjool dates are sticky and fudgy even after blending, they are the perfect no-bake dessert.
How to Make Date Caramel Sauce {Hint: So Easy!}
First, remove the pits from the Medjool dates. Soak them in warm water for 10 – 15 minutes to soften if they appear to be dry and hard.

What Dates Should You Use: There are quite a few dried dates variety out there. I have tested a few of the for this caramel recipe and found that the best type to make date caramel is medjool dates. I like to buy the ones in a whole with pits in them. They stay fresher than the ones without pits.
Ideal Texture for the Dates: They should be plump and soft to touch, which is the key to a sticky and gooey consistency for my date caramel recipe.
But sometimes they may harden and become more dry after being refrigerated. But don’t worry, I have just the solution fo you! Soaking the dates in warm water for 10 – 15 minutes can soften them and ensure that the date caramel comes out smooth and creamy.
Full Fat Coconut Milk or Coconut Cream in a can are my preferred liquid to use, after testing light coconut milk and other type of milk.
When you open the can of coconut milk, there is usually a thick layer on top that is solid, and the bottom is thin liquid. We want the thick layer here. It makes the caramel sauce richer and creamier.
Storage: They can be stored in an airtight container in the refrigerator for a week for the best result.
