Medjool dates are dried dates that have a deep sweetness. Because when the dates go from fresh to dry, their sweetness becomes much more concentrated.

They usually taste a lot like caramel with notes of toffee.

I love using dates as the only sweetener in my no-bake treats. Since the texture of Medjool dates are sticky and fudgy even after blending, they are the perfect no-bake dessert.

How to Make Date Caramel Sauce

First, remove the pits from the Medjool dates. Soak them in warm water for 10 – 15 minutes to soften if they appear to be dry and hard.

Tips for The Perfect Date Caramel

What Dates to Use: There are quite a few dried dates variety out there. I have found the best type to make date caramel is pitted medjool dates. I like to buy the ones in a whole with pits in them. They stay fresher than the ones without pits.

And yes, we need to remove the pits ourselves before blending.

Ideal Texture for the Dates: Quality Medjool dates should be soft and plump. But sometimes they may harden and become more dry after being refrigerated. Soaking the dates in warm water for 10 – 15 minutes can soften them and ensure that the date caramel comes out smooth and creamy.

Full Fat Coconut Milk or Coconut Cream are my preferred liquid to use. They make the caramel sauce rich and creamier.

Vanilla is optional but pure vanilla extract can deepen the flavor profile.

Storage: They can be stored in an airtight container in the refrigerator for a week.
