These FLUFFY gluten-free banana pancakes are my weekend staples. They are the most healthy and energetic way to start the morning. This Banana pancake recipe is not only so delicious, but also is gluten free, low sugar and so easy to make.

Gluten Free Banana Pancakes for the Best Breakfast

What do pancakes remind you of? For me, it’s that cozy Sunday brunch on a peaceful morning in a house that smells like coffee and cinnamon. These FLUFFY gluten-free banana pancakes are my weekend staples. I get so excited to wake up early in the morning because I get to put on a mellow soundtrack and whip these bad boys up!

These healthy and yummy gluten-free banana pancakes are refined Sugar-Free, Grain-Free and Gluten-Free, but not free of fluffiness. They remind me of the glorious pancakes from iHop (yes, I too went through a period of obsession), they are even BETTER and way healthier.

Healthy Ingredients for an Easy Gluten Free Banana Pancake Recipe

I sweetened them with a ripe banana (I mean.. imagine banana bread in pancake form) and used almond and chickpea flour instead of processed wheat flour. If you are looking for a paleo friendly pancake recipe, check out these pumpkin pancakes!

So Many Ways to Enjoy Banana Pancakes

You can either STACK them or make these pancake “toasts”. I personally prefer the “toasts” form because I get to put more toppings on them.  If you know how much I love my toppings already, these pancake “toasts” are just the best vehicles for all of the toppings I want to consume.
