- Medjool Dates: I love using dates as a natural sweetener. Besides that, its thick and chewy texture helps to hold the energy bites together. So delicious! If your dates are more on the dry side, I recommend soaking them in hot water before making this recipe. Tips on Making the Best No Bake Cinnamon Roll Energy Bites
Since I pride myself on no bake treats, I have a few tips that will help you to make THE BEST no bake treats too!
- For a creamier filling, soak the medjool dates in hot water for at least 10 minutes. The texture will be incredibility delicious!
- If you don’t have a food processor, don’t worry, you can use a blender. Just be sure to blend until the mixture is very smooth.
- Try new mix-ins to the filling, such as chopped nuts, raisins, coconut flakes or mini chocolate chips. They’re all SO GOOD!
- Freeze at least 2 hours before cutting to keep the cinnamon roll bites in the original round shape. They are so cute!
- Store in the freezer. No defrosting needed.

Ingredients
Roll
- 2 cups raw cashews
- 8-10 medjool dates, pitted
- 1 tsp ground cinnamon
- 1 pinch salt
Filling
- 14-16 medjool dates, pitted
- 2 tsp ground cinnamon, heaping tsp
- 2-3 tbsp water

Instructions
- In a food processor, combine the cashews, dates, cinnamon, and salt. Process until smooth and creamy.
- Line a 9×13 inch baking dish with parchment paper. Spread the dough into the prepared baking dish and smooth out the top.
- Put in the freezer while making the filling.
- Blend the pitted medjool dates and cinnamon and water (if using any) until smooth, gooey and spreadable.
- Remove the dough out of the freezer. Spread the filling layer on top evenly.
- Roll the dough slowly tightly with the help with the parchment paper – roll parchment paper until the edge touches the filling. Peel up the parchment paper and repeat the process until the whole thing is rolled up.
- Freeze for at least 2 hours or overnight.
- Cut the dough into 12 equal pieces. Serve immediately or store in the freezer.
