Easy Chinese Chicken Marinade for Grilling, Baking & Stir Fry
If you’re looking for the best chicken marinade that’s simple, flavorful, and incredibly versatile, you’ve come to the right place. This Chinese-inspired chicken marinade is one of those recipes you’ll find yourself making on repeat. While it’s my go-to for chicken, it’s equally delicious with pork, beef, shrimp, or even tofu. Grill it, bake it, or toss it into a quick stir fry—the possibilities are endless.

One of my favorite ways to use this marinade is for meal prep. I portion chicken into freezer bags with the marinade already mixed in. When life gets busy (which is basically every week), I simply move a bag to the fridge the night before. By dinner time, the chicken is thawed, fully marinated, and ready to cook. It’s one less thing to think about on a hectic weeknight.
I tested so many different versions of this marinade before realizing I had been chasing a flavor I already knew.
Growing up, my mom always marinated chicken and pork with soy sauce, Shaoxing wine, garlic, ginger, and a few simple seasonings before cooking. There was nothing fancy about it, but somehow the meat always came out incredibly tender, juicy, and packed with flavor.
Years later, in my own kitchen here in America, I adapted that same method using ingredients I always have on hand. Now it’s the marinade I use for everything.
No more gatekeeping. I’m sharing this recipe so you can have this evergreen, crowd-pleasing marinade in your back pocket too.

Why You’ll Love This Marinade
1. Big Flavor Without a Long Ingredient List
I’ve tested countless marinades over the years, and this one has become our family’s favorite. The coconut aminos add savory umami with just a touch of sweetness, while honey (if using) helps create beautifully caramelized edges on the grill or in the oven. Fresh garlic and Shaoxing wine add just enough depth to make the chicken taste like you spent way more time on dinner than you actually did.
2. One Marinade, Endless Meals
This is one of those recipes that works no matter how you plan to cook.
Marinate whole chicken thighs for the grill, bake chicken breasts for meal prep, or slice the chicken first and use it in a quick stir fry.
Once it’s cooked, you’ll find yourself using it in everything.
- Serve it with rice and vegetables with this Honey Garlic Sauce
- Slice it into tacos or quesadillas – This is my kiddos’ favorite dinner!
- Toss it into fried rice or noodles to make the best Sesame Noodles with Chicken
- Add it to salads and grain bowls throughout the week
3. It Works With More Than Just Chicken
Don’t stop at chicken.
This marinade idea is inspired by my mom. So naturally, it works beautifully with pork chops, flank steak, shrimp, or even tofu. The flavor is balanced enough to complement just about any protein, making it one of those recipes you’ll come back to again and again.
4. My Favorite Meal Prep Shortcut
If you haven’t tried freezing meat in the marinade, you’re missing out.
Divide your chicken into meal-sized portions, pour the marinade into each freezer bag, and freeze everything together. As the chicken thaws, it marinates at the same time.
When dinner rolls around, there’s no measuring, mixing, or extra prep—just cook and serve.
As a busy mom of two, any step I can eliminate on a weeknight is a win.

This marinade has earned a permanent spot in my freezer because it makes dinner feel effortless. Whether I’m grilling chicken for friends, baking it for meal prep, or tossing it into a quick stir fry after school pickup, I know it’s going to turn out flavorful every single time.
Sometimes the best recipes aren’t the complicated ones—they’re the ones you keep coming back to. And this is definitely one of mine.
