Sheet Pan Dumpling Wraps (Best Use for Leftover Dumpling Filling)
These dumpling wraps use the filling from my pork dumpling filling, pressed flat on a sheet pan and baked for 8 minutes. Slice it into strips, tuck it into a tortilla with cucumber, carrots, and cilantro, and drizzle on some dumpling sauce. All the dumpling flavor, on a night when folding 40 dumplings is not happening.
This one started on a Tuesday when I had a pound of dumpling filling in the fridge and zero energy to fold. My youngest asked for dumplings, I said not tonight, but… then I spread the whole thing on a sheet pan just to see what would happen. 😬 Eight minutes later the edges were browned and the strips sliced clean. I rolled them up in tortillas with whatever veggies were in the crisper, and he asked for them again the next night. If you liked my dumpling tacos, these are their even lazier cousin.

A Quick Look At The Recipe
- Recipe Name: Sheet Pan Dumpling Wraps
- Ready In: 23 minutes
- Serves: 4
- Main Ingredients: ground pork (ground chicken, or ground turkey), Shaoxing wine, inch fresh ginger (grated), green onions (finely chopped), coconut aminos (or soy sauce), salt (or to taste), sesame oil (optional), Thinly sliced cucumber
- Why You'll Love It: All the juicy, savory flavors of homemade dumplings without wrapping a single one! This easy dumpling filling is pressed onto a sheet pan, baked in just 8 minutes, then sliced into strips and tucked into wraps with your favorite fresh veggies and toppings.
Why Bake Dumpling Filling on a Sheet Pan
A thin, even layer is the whole trick. Spread the filling out to the edges of the pan and it cooks through in about 8 minutes. No flipping, no skillet to babysit.
Mix the filling until it turns slightly sticky. That’s what holds the strips together when you slice them, so they don’t crumble into loose ground meat in your wrap.
Ground pork is the classic and stays the juiciest. Ground chicken or turkey work too, just cook them to 165°F instead of 160°F for pork.
Top Tips Before You Start
- Line the pan with parchment so the filling lifts right off.
- Use a rimmed sheet pan or jelly roll pan. The filling releases some juices while it bakes.
- Let it cool for a couple of minutes before slicing so the strips hold their shape.
- Prep the veggies while the oven heats. Everything’s ready when the filling comes out.

Tortillas, Lettuce Cups, and Toppings
Flour tortillas are soft and sturdy, and they roll up without tearing. Warm them for a few seconds so they bend easily.
For a lighter version, use butter lettuce or romaine leaves as cups.
Cucumber, carrots, and cilantro are the base. Kimchi adds crunch and a little funk, and a spoonful of crispy chili oil brings the heat.
Set everything out and let people build their own. It’s an easy dinner for picky eaters.

What to Serve With Dumpling Wraps
A bowl of egg drop soup turns these into a full dinner. For something fresh, add an Asian crunch salad on the side, and keep extra dumpling sauce on the table for dipping.
FAQ
Can I make the filling ahead? Mix it up to a day ahead and keep it covered in the fridge. The ginger and green onion have more time to flavor the meat, so it’s a good one to prep the night before.
Is this soy free? The filling uses coconut aminos, so it’s soy free as written. Double check your dumpling sauce, since most are made with soy sauce.
How do I store leftovers? Keep the cooked strips in an airtight container in the fridge for up to 3 days. Store the veggies and tortillas separately so nothing gets soggy.
How do I reheat the filling? A hot skillet for a minute or two per side brings back the browned edges. The microwave works fine too.
Can I use store-bought dumplings instead? Frozen dumplings work in a pinch. Cook them, cut them in half, and tuck them into the wrap with extra veggies, since you’ll get more wrapper and less filling.
