Dumpling Tacos (Viral Smash Tacos with Juicy Pork Filling)
Inspired by the viral smash taco trend, I combined it with my family’s go-to pork dumpling filling to create these incredibly flavorful dumpling tacos. If you’ve ever craved homemade dumplings but didn’t have the time (or patience!) to fold dozens of them, this recipe is for you!

Not only can I have dinner on the table in about 30 minutes, but these have also become one of my kids’ most requested meals. They’re juicy, crispy, customizable, and so much fun to eat.
One of my favorite parts is setting out bowls of toppings and letting everyone build their own taco. From one mom to another, I’ve learned that picky eaters are so much more excited to eat something they helped create. Somehow, everything tastes better when little hands are involved.
The funny thing is, making dumpling filling has never been the hard part. That’s the easy, relaxing step for me. It’s the rolling, pleating, and folding dozens of dumplings that takes time—and while my parents can wrap beautiful dumplings with their eyes closed, I definitely haven’t inherited that level of talent.
That’s exactly why I created this recipe.
Instead of wrapping each dumpling individually, you only need to spread the filling onto a tortilla, gently smash it meat-side down onto a hot skillet, and cook until the pork is beautifully browned and the tortilla is perfectly crispy. You get all the flavors of a homemade pork dumpling in a fraction of the time.

Ingredients
Dumpling Filling (More tips linked)
- 1 pound ground pork, preferably 80/20
- 2 tbsp Shaoxing wine
- 1 inch fresh ginger, finely minced
- 2 stalks green onions, chopped
- 2-3 tablespoons coconut aminos*, or soy sauce
- ½ tablespoon sesame oil, optional
- ½ tsp salt, or to taste

- 8-10 small flour tortillas

Make the dumpling filling:
- In a bowl, combine ground pork, Shaoxing wine, ginger, green onion, salt, soy sauce (or coconut aminos), and sesame oil. Mix until well combined. For the best flavor, let the filling marinate in the refrigerator for at least 30 minutes.
Assemble the Tacos
- Place a tortilla on a flat surface. Add a scoop of pork filling and spread it evenly across the tortilla, leaving a small border around the edges.
- Heat a lightly greased skillet over medium heat. Place the tortilla filling-side down onto the skillet.
- Use a spatula to gently press and smash the taco so the pork spreads into a thin, even layer.
- Cook for 2–3 minutes, or until the pork is cooked through and the bottom is golden and crispy.
- Flip and cook the tortilla side for another 30 seconds to 1 minute until lightly crisp.
- Top with your favorite toppings and enjoy immediately*
