It’s everything you could want in a breakfast: bursting with flavor, sweet, hardy, and filling.  

Sometimes I don’t have time in the morning to make breakfast. On days like these, I like having something quick and simple on hand.

It’s the perfect meal prep – having a batch or two in the freezer for a busy week is a lifesaver.

What Seasonings are Good for Oatmeal?

Unquestionably, oatmeal is one of the most versatile breakfasts.

Specifically, if you’ve been on TikTok, you know that there are thousands of recipe variations.

In any event, my favorite spices are:

Apple Pie Spice

pumpkin pie spice

Cinnamon

Nutmeg

Cardamom

Cacao powder

A pinch of salt

In any case, experiment with what you have in your pantry and see what you like!

However, this recipe gives a special feature to the delicious spices already naturally within chai tea.

Can you put Oatmeal in the oven?

Yes!

In the long run, how many times have you put your oatmeal in the microwave only to result in an oatmeal volcano?  Markedly, too many times.

For this reason, baking oatmeal is my new favorite thing. By and large, all you need to do is mix the ingredients and toss them into a baking dish.

Additionally, I find baking the oats allows for deeper flavors, slow roasted fruit, and crispy nuts. Seriously…a flavor explosion!

In summary, baking emphasizes the flavor of whatever you add to your oatmeal.

How to add Extra Protein to Oatmeal?

Unquestionably, it’s important to get in enough protein for breakfast – it’s part of what keeps you fuller longer, with sustained energy.

First thing to remember, is that oats, nuts, and likely the milk you use to make the oats already have protein.

However, you can also add:

  • Protein powder or collagen peptides within the baked oats
  • Greek yogurt on the side
  • Chia seed or hemp hearts on top
  • Any additionally nuts and seeds

In general, all are great options to fortify your breakfast!

Ice cream: I mean.. It can’t get better than turning breakfast into a dessert or vice versa. Vanilla ice cream on this Chai spiced oats never fails.

Maple syrup

Granola

Nut butter: If you know me, peanut butter, almond butter, sun butter, just about any nuts and seed butter makes all things taste Be(U)tter.

Whipped cream

Your favorite latte or chai tea

How to store Chai Spice Baked Oatmeal

Particularly, this recipe is best left on the kitchen counter only for a day. Then, it’s best to store it in the fridge for 5-6 days.

And YES, you CAN freeze them!

In this case, freeze them in individual squares. This will give you the perfect serving sizes for breakfast. I would recommend eating them within 2-3 months for freshness purposes.

Simply reheat them for 30 seconds, or until your desired temperature in your microwave.

Ingredients

Baked Oats

  • 2 cups of milk
  • 2 chai tea bags*
  • 1 2/3 cup rolled oats**
  • 1/4 cup pecans, roughly chopped
  • 1/2 cup apple sauce, unsweetened***
  • 1/2 cup maple syrup
  • 2 tbsp ground flax seeds
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom

Pecan crumble

  • 1/2 cup pecan halves
  • 1/4 cup walnut *
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 1 tbsp coconut sugar
  • 1 tbsp vegan butter or coconut oil

Instructions 

  • Preheat your oven to 350 F
  • In a small pot bring your milk to boil and immediately turn off the heat.
  • Add the tea bags and let them steep for 10 – 15 minutes while you prep the rest of the ingredients.
  • In a big bowl, mix the oats, pecans, ground flax, cinnamon, and cardamon for the baked oats.
  • Add the spiced milk, apple sauce, and maple syrup and stir well.
  • In a small bowl, mix the pecans or walnuts, cinnamon, salt, and coconut sugar.
  • Spread the pecan crumble across on top of the oat bake.
  • Bake for 30 – 35 minutes or until the middle is set.

Notes

*you can use 2 -3 tea bags. Some brands have a stronger taste, some are milder. I like the Tazo brand decaf chai
**I love using gluten-free rolled oats/old fashioned oats
***you can also make your own here. You can also use a cinnamon apple sauce to give it an extra spice
