Can I Use Any Banana for These No Bake Banana Bites

While you can use any bananas, I recommend waiting until your bananas are nice and spotty!

You know, the kind of spotty where you can smell that pungent banana scent!

The brown spots are technically an indicator that the banana is ripe- same with the smell, according to this article.

So, when you have a bunch of bananas to use up- be sure to add these bites to your list of things to make!

Ingredients Needed to Make Banana Foster Bites

Only 4 Ingredients are needed to make these delicious energy balls. Plus, 2 additional if you want to make them exactly like mine!

Main Ingredients

Bananas– This is obviously the main ingredient, make sure they are spotty too (like, almost all the way brown, more spots the better!).

Coconut Flour– This will act as the binder to hold all of the ingredients together

Medjool Dates– Dates act as a natural sweetener along with the bananas

Almond Butter– What’s an energy bite without some nut butter. You can use any nut butter of choose in this case!

Optional Ingredients

Rum Extract– This will help to give this bite the banana foster taste! I got my Rum Extract from Whole Foods- but you could find it at your local grocer, or Amazon!

Chocolate Chips– You will want chocolate chips if you want to coat these bites in chocolate! It’s truly what makes this treat, in my opinion!

These energy bites are fairly simple to make!

Tips for Dipping in Chocolate

A lot of my treats nowadays are dunked in chocolate…that’s because it is delicious! I try to get some cleaner chocolate, like Hu, Lily’s, or lately Enjoy Life- especially since I have had to do an elimination diet while breastfeeding Mason!

  • Stick a tooth pick in the banana foster bites, dip the balls in the chocolate, use a spoon to cover all sides. Then transfer the chocolate covered banana foster bites to a wax paper lined plates or parchment paper lined plates/cookie sheets.
  • Take out the tooth pick and immediate smooth the hole with the melty chocolate before it sets.
  • Add Nut Butter or Coconut Oil to the chocolate when melting (this can help reduce cracking once the chocolate consolidates).

Spice Up Your Banana Foster Energy Bites

We love to spice up our treats around here- and there are so many substitutes you can make or add in!

  • Add some sea salt on top
  • Sprinkle in some crushed nuts- I love using pecans or walnuts
  • Sub out coconut flour, for oat flour! You make need to use ~1/2 cup more as it won’t absorb as well as the coconut flour
  • Use protein powder in the bites! I used Vanilla Pea Protein- it does make the batter a little bit drier, so you may replace it with the coconut flour, or just use a little less.
After coating all balls, freeze for another hour, then enjoy or store in an airtight container.

How to Store Your Banana Bites

These no bake truffles are the perfect dessert or snack any time of day! I recommend storing these in the freezer or the fridge.

They will last up to 1 week in the fridge in an airtight container. Or in the freezer for 2-3 months.

You can leave them at room temp on the counter, but if you use coconut oil in the dipping process, the chocolate will melt FAST…especially in the summer months, so beware!

Ingredients

  • 3 ripe bananas
  • 1/2 cup coconut flour
  • 1/2 cup medjool dates, *pitted
  • 1/4 cup almond butter

Chocolate Coating

  • 1 cup chocolate chips
  • 2 tbsp almond butter/ or coconut oil

Instructions 

  • In a blender, blend banana coconut flour, pittedmedjool dates and almond butter until smooth
  • Pour out the mixture into a bowl, freeze for an hour or refrigerate overnight.
  • Form and roll into balls (Damp your hands before rolling can help prevent the mixture sticking to your hands.)
  • Freeze for at least 4 hours.
  • In a microwave-safe bowl, melt the chocolate chips with a scoop of almond butter or coconut oil (this can help reduce cracking once the chocolate consolidates).
  • Coat each banana foster bites in the chocolate and then freeze them for at least an hour to set.
  • Enjoy, and store in the freezer.
