Strawberry Ice Cream Bars {with Cottage Cheese}
You only need three main ingredients to make this refreshing summer treat – strawberries, cottage cheese, and honey. They are sweet, tangy, creamy, and light. I love to sprinkle some graham crackers on top to make these ice cream bars even more fun and delicious.
Ditch the traditional ice cream bars and try this healthier version made with cottage cheese and sweetened by honey only.
It is simple and easy to make. All you need to do is to blend the ingredients together and freeze. There is no churning necessary, no ice cream maker is needed!
The flavor combination is surprisingly delightful.
The slightly tangy cottage cheese is blended with sweet honey to create this beautiful floral sweetness. Then we continue adding another layer of refreshing strawberry flavor to balance sweet and tart perfectly.
Ingredients For Strawberry Ice Cream Bars
This recipe is simple and only requires 3 simple ingredients, with 1 optional!
Cottage Cheese– I used full fat here to achieve optimal creaminess for these ice cream bars!
Strawberries: Fresh or Frozen- I prefer fresh, but if all you have is frozen, then make sure to thaw them first and drain them a little. You could always save the strawberry juice and mix with a little sugar on the stove to create a strawberry syrup to drizzle on top!
Honey– If you don’t have honey on hand, you could always use some maple syrup instead
Graham Crackers on Top– These are optional; however I truly feel like that make these bars absolutely DELICIOUS!
How to Make Easy Blender Ice Cream Bars
Optional Step to make extra creamy ice cream bars:
Strain the extra liquid out of the cottage cheese using a cheese cloth or nut milk bag.
Now the “ice cream” base is ready, let’s make them into bars and garnish the top.
A Few Customizations To Try
Fruity Fiesta– Yup, you heard it here first! Mix it up and add your favorite fruit medley to this! I recommend using fresh fruit though!
Nut Butter– Either drizzled on top, or mixed in… your favorite nut butter will be the perfect addition.
Chocolate and Bananas: You might know how much I love the chunky monkey flavor. So if you have not tried adding chocolate or bananas to your desserts already, it needs to be your next flavor to try!
Yogurt: Try different yogurts to add to your ice cream bars! There are a ton of varieties out there if you want to try some greek yogurt, non fat or even flavored yogurts.
Cinnamon or Pumpkin Pie Spice– This has to be one of my favorites, I just LOVE adding some cinnamon inside or just dashed on top! It is the perfect way to elevate your treats.
Perfect for Kids to Make Too
This ice cream recipe is so simple and easy to make. It is perfect to get your curious little ones involved in the kitchen.
They can even pick the fruits they want to add to these bars. My toddlers are currently obsessed with making and eating these bars.
How to Store Your Strawberry Ice Cream Bars
You can store these in the freezer for about 1 month when stored in an airtight container. You may want to allow it to thaw for about 3-5 minutes before indulging in it!

Ingredients
- 1 cups Mango *, frozen or fresh
- 1 cup Cottage cheese, Full fat
- 3-4 tbsp Honey, or maple syrup
Instructions
- In a food processor, add in honey and cottage cheese.
- Blend until smooth.
- Add in most of the mango chunks. Pulse a few times to combine. Make it as smooth or as chunky as you like.*
- Pour into popsicle molds.
- Freeze for at least 3 hours (or overnight) until completely set.
- Enjoy! (you might need to let it thaw for 3-5 minutes before biting into them)
