I don’t exactly remember when I started making no bake energy balls. But I literally always have them sitting in my freezer.

I enjoy a couple of these no bake peanut butter chocolate balls with my coffee in the morning.

I pop a couple in before my workout for a quick energy boost.

Especially as summer approaches.

It is about to be brutally hot in Charlotte, and I have no intentions of turning the oven on. Therefore, these no bake peanut butter chocolate balls are perfect!

All you need is to pulse the four ingredients in a food processor, roll into balls, freeze, and enjoy!

How to make these Peanut Butter Chocolate Balls extra Fudgy

There are some tricks when it comes to making these raw dessert balls super fudgy.

Soaking Nuts Overnight

First of all, soaking nuts and seeds has great health benefits. Soaking in some warm water and salt helps to break down the phytic acid in nuts and seeds, therefore make the nutrients more available for our body to digest.

Secondly, the soaking process softens the nuts/seeds, which results in these extra gooey and fudgy peanut butter chocolate balls.

If you don’t have time to soak for that long, adding a couple of extra tablespoons of liquid such as nut milk or water will do the same trick as well!

How I use CBD oil

  • 1 cup cashews, soaked and rinsed
  • 1 cup walnuts, soaked and rinsen
  • 8 large dates soaked
  • 1/2 cup peanut butter
  • 1/4 cup cacao powder
  • pinches sea salt
  • 4-6 drops of CBD oil, optional
  • 1/4 cup cacao nibs, optional

Instructions 

  • Soak nuts overnight in warm water and a pinch of salt (see above for benefits)
  • Drain and rinse nuts
  • Soak dates in warm water for 10 minutes, drain and pit. Set aside
  • Pulse nuts in a food processor until blended finely. Scrape the wall of the food processor a few times.
  • Add cacao powder and sea salt, blend again.
  • Add peanut butter, dates and CBD oil (optional), blend well. Freeze the batter for about half an hour to chill (makes it easier to roll into balls without sticking too much)
  • Use a cookie dough scoop or roll into balls with some cacao nibs
  • Store in the freezer. Sit in room temperature for about 5 minutes to defrost and enjoy!

Notes

  1. You can substitute the cashew and walnuts with any kinda of nuts and seeds. Oily nuts come out to be more fudgy.
  2. For the use of optional CBD: it will not change the taste of these chocolate peanut butter balls nor will you feel “high”. This additive is purely for health and wellness benefits. (Please consult your doctor first if you have any health concerns)
