Ingredients Packed with Bold Flavors

Miso Paste is made from fermented soybeans, delivers a unique deep savory and umami flavor that enhances the glaze’s complexity. Its salty and earthy notes balance the sweetness of maple syrup.

The two most common types of miso paste are white miso and red miso:

  • Red miso is more robust and tangy, ideal for a stronger, bolder flavor.
  • White miso is milder and sweeter, making it a great starting point if you’re new to miso.

Coconut Aminos or Low-Sodium Soy Sauce
Coconut aminos or low-sodium soy sauce adds a sweet and salty dimension to the glaze.

  • Coconut aminos is a soy alternative with a naturally sweeter profile.
  • Soy sauce provides a classic umami flavor.

Both options work wonderfully in this recipe.

Maple Syrup introduces caramel-like notes that perfectly balance the saltiness of the miso and coconut aminos.

If you heat the glaze, it will also thicken to create a sticky consistency, making it ideal for stir-fries

You can substitute apple cider vinegar or white wine vinegar if needed.

How to Make Maple Miso Glaze

* Arrowroot starch thickens the glaze only when heated. If you’re using this recipe as a salad dressing, the starch won’t have any effect and can be omitted.

The Perfect Thick and Sticky Glaze

To make the sauce smooth and thick, whisk the mixture well until no clumps remain. Adding warm water to the mixture can also help make whisking easier and more effective.

Simmering the mixture over low heat for a few minutes helps the glaze become thicker, glossy, and sticky.

You can adjust the thickness of the glaze by adding more or less water to suit your preference.

Ingredients

  • 1/4 cup Miso Paste
  • 2 tbsp Coconut Aminos, or low sodium soy sauce
  • 3 tbsp Maple Syrup, Or Honey
  • 1 tsp Rice vinegar
  • 3 -4 tbsp Water
  • 1/2 tsp Ground Ginger, optional
  • 2 tsp Chili oil, Optional

  • In a mixing bowl, whisk togehter all the ingredients until well combined, no clump is left.
  • Shake well before using.
