Maple glazed baked Donuts with bacon pieces that are healthy? Yes, please.

I know Summer is still in full force over here in Charlotte. But seriously, you guys, I can not wait for fall already. All the fall maple flavor, hearty bacon smell, and holiday approaching…Sorry I am just getting ahead of myself.

Anyway, I have been craving maple and bacon combination this past week and just have to get my hands on it.

I used to make baked donuts all the time last fall. Now, it’s time to bring them back.

The sizzling and crispy bacon, paired with sweet maple.

Best combination Ever.

Healthy Baked Donuts

First of all, let’s just say I have nothing against fried donuts. But, these baked donuts are so delicious too. Even better, they are so easy to make. I mean, who has a deep fryer sitting in your home kitchen? At least I do not. Certainly, baked donuts are healthier for you.

Keto and Paleo Donuts

I made a few healthy twists in this maple bacon donut recipe. So now, they are gluten free, keto and paleo compliant. Yet, they are still so fluffy, moist and delicious.

First, instead of regular flour, I used almond flour as an alternative.

Second, in order to replace regular white sugar as a sweetener, this recipe calls for pure maple syrup.

Additionally, there is no additives such as shortening or guar gum. I simply added tapioca flour as a thickener.

Tapioca flour is one of my favorite ingredient in paleo and keto baking. Since there is no gluten in paleo flours, sometimes, they can fall apart easily. Tapioca flour is a type of starch and thickener that helps structure these baked donuts.

Donuts for Breakfast or Dessert

These maple bacon donuts are the perfect breakfast on the go. It is high in protein, healthy fats, and low in carbs. It will certainly fuel your morning.

Of course, they will also satisfy your sweet tooth as a night cap dessert.

 

How to Make These Maple Bacon Donuts

First, broil the bacon!

Can you tell I am super exciting for this step? I just love that bacon smell in the kitchen. My favorite way to make bacon is to broil it with a broiler pan. In comparison with the pan fried bacon, the broiling method leaves you a much cleaner and grease-free stove.

Second, in big mixing bowl, combine the dry ingredients:

  1. Almond flour
  2. Coconut flour
  3. Tapioca flour
  4. Baking soda

Third, in a second medium mixing bowl, whisk all the wet ingredients together:

  1. Maple syrup (use keto maple syrup or stevia for keto option)
  2. Coconut oil
  3. Nut milk of your choice

 

Then pour the wet ingredients over the dry ingredients. Mix well.

Additionally, fold in 2 tbsp bacon pieces. Then pour the batter into a donut pan about 3/4 full.

Tip: Do not pour over the middle piece otherwise you won’t have a donut hole. (no pun intended)

Lastly, bake 15 minutes or until tooth pick come out clean. And let it cool completely on a cooling rack.

Super Easy 3- Ingredient Maple Coconut Glaze

This maple coconut cashew is my go to Paleo and Keto frosting. Just like how I named it. There are only 3 ingredients in this healthy icing recipe. So easy to make.

 

3 ingredient maple coconut cashew icing

 

You will need:

  1. Coconut cream
  2. Maple syrup (use keto maple syrup or stevia for keto option)
  3. Cashew butter

 

Whisk all the ingredients together until smooth.

Then leave in the fridge for at least 20 minutes or freezer for 10 – 15 minutes.

Tip: Cooling down the icing will result in a more “icing-like” texture. So it won’t just melt away on the donuts.

How to Store Maple Bacon Donuts

 

You can store these baked donuts in an airtight container in the fridge for up to 3 to 4 days. Or you can store in the freezer for up to 2 months.

Storing in room temperature may leave you a messy donut, due to the fact that this maple coconut cashew glaze melts fairly quickly.

Ingredients
  

Donuts:

  • 5 pieces of bacon
  • 1 cup [almond flour]
  • 1/4 cup [coconut flour]
  • 1 tbsp tapioca flour
  • 3 eggs
  • 1/3 cup maple syrup *
  • 3 tbsp coconut oil
  • 1 tbsp nut milk
  • 1/2 tsp baking soda

Coconut Cashew Icing

  • 1/4 cup canned Coconut Cream
  • 1/4 cup maple syrup *
  • 1/4 cup [Cashew Butter]

Instructions
 

For the Bacon:

  • Place 5-6 pieces of bacon on a broiling pan. Broil for 4-5 minutes or until crispy.
  • Transfer to a piece of paper towel on a plate. Once the bacon cools down, chop into pieces. Set aside.

For the Donuts:

  • Pre-heat oven to 350 F. Grease a Donut pan with coconut oil.
  • In big mixing bowl, combine the dry ingredients – almond flour, coconut flour, tapioca flour and baking soda
  • In a second medium mixing bowl, whisk all the wet ingredients together – maple syrup, coconut oil and nut milk. Then pour the wet ingredients over the dry ingredients. Mix well.
  • Fold in 2 tbsp bacon pieces. Then pour the donut batter in donut pan about ¾ full (do not pour over the middle piece).
  • Bake 15-17 minutes or until tooth pick come out clean.

For the Maple Coconut Glaze:

  • Whisk 1/4 cup coconut cream, ¼ cup maple syrup, ¼ cup cashew butter together.
  • Leave in the fridge or freezer for at least 20 minutes for it to harden a little bit.
  • Wait until donuts completely cooled down. Take the frosting out of the fridge or freezer. Then pour over the donuts. Sprinkle some extra bacon pieces on top. Enjoy!

Notes

  1. Be generous when you grease the donut pan, otherwise, these donuts will be hard to take out.
  2. You can also use a silicon non-sticking donut pan to prevent donuts from sticking.
  3. Instead of cashew butter, you can also use soaked cashew. See this post for “how to make coconut cashew frosting”)
  4. * Use keto maple syrup or stevia (liquid form) for keto-friendly donuts.

    Hi, how is maple syrup keto? Or tapioca flour? And 19.5 carbs?

      The recipe gives options for Keto-friendly maple syrup. The nutrition facts are shown as the original recipe (regular syrup). There is only 1 tbsp of tapioca flour needed for this recipe. Hope it helps.
