These healthy chocolate chips s’mores cookies will definitely have you asking for ‘some more’ (pun intended). They are a delicious combination of hot chocolate and those soft and caramelized marshmallows. It is also grain-free, gluten-free and can be made paleo and keto.

 

What goes better together than chocolate and marshmallows? Nothing compares to that campfire-roasted, perfectly toasted marshmallow that makes the chocolate melt perfectly into the crunchy graham crackers or even better, Cookies. That’s what it’s like biting into one of these delicious s’mores cookies (except without the marshmallow getting all over everything, you know what I’m talking about!).

Now I know this may seem more like a summer snack, but trust me when I tell you that these will be a big hit at any holiday party. You’ll have them singing “marshmallows roasting on an open fire..” instead of chestnuts because these cookies are just too good.

 

Why I love these Grain-Free Chocolate Chip  S’mores Cookies

I’m normally not a big marshmallow fan, think chubby bunny challenge. I will pass.

However, s’mores and hot chocolate topped with marshmallows are the exception. There’s just something about how they melt together with the chocolate. These  Chocolate Chip S’mores cookies are the best of both worlds.

The marshmallow gets caramelized after baking in the oven. It gets a little sticky and crispy.

Easy and Healthy S’mores Cookies Recipe

Another reason I love these cookies is because they are pretty simple to make. They are made from a few accessible ingredients that you probably already have in your pantry. Additionally, all you need is one bowl.  So you don’t need to get a lot of dishes dirty either.

Ingredients for Grain-Free S’mores Chocolate Chip Cookies 

As I mentioned, you only need a few simple ingredients for this recipe and if you’ve been into paleo/gluten-free baking before then you probably already have them on hand.

You will need:

  1. Almond Flour
  2. Almond Butter
  3. Coconut Oil
  4. Coconut Sugar
  5. Eggs 
  6. Baking soda
  7. Chocolate Chips 
  8. Marshmallows (The ones I used here are not paleo, but I found these Paleo Version from one of my favorite bloggers, Laura.)

 

I use these ingredients almost exclusively for all of my paleo baking. How to Make One Bowl Healthy S’mores Cookies

Now I know I promised you easy cleanup and I will deliver. All you need is one bowl and a hand mixer! 

Simply use the hand mixer to beat the eggs almond butter, coconut oil, and coconut sugar. Once blended thoroughly, fold in the almond flour and baking soda. Lastly, fold in the chocolate chips and marshmallows of choice. 

 

Pro tip: The marshmallow will melt completely if touching the pan. You can top the cookies with the marshmallows (BEFORE baking) for an intact marshmallow and picture-perfect s’mores cookies.  

 

How to Serve these Paleo S’mores Chocolate Chip Cookies

I know what you’re thinking, how else would I serve cookies? With a glass of milk, duh!

Personally, I like to wash these down with an ice-cold glass of almond milk, but I also like to keep some frozen and crumble them top of ice cream or yogurt… you get that rocky road vibe. If that’s your thing, I suggest doubling this recipe and just keeping a stash in the freezer, you won’t be disappointed!

Ingredients

  • 1 room temperature egg
  • 1/4 cup smooth almond butter
  • 1/4 coconut oil, or melted butter/vegan butter
  • 1 1/2 cup almond flour, packed]
  • 2/3 cup coconut sugar
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 1 cup dark chocolate chips, dietary options see notes*
  • 1/3 cup mini marshmallow

Instructions 

  • Preheat Oven to 350 F
  • In a medium mixing bowl, mix together all the wet ingredients- egg, almond butter, coconut oil, and coconut sugar using an electric hand mixer. Add in the dry ingredients - almond flour, sea salt, baking soda and fully combine.
  • Fold in the chocolate chips and half of the marshmallows. Chill in the freezer for 10 minutes.
  • Use a cookie dough scooper to scoop the dough on to a greased parchment paper with a little room in between. Press down the cookies a bit as they won't spread out too much). Add the rest of the marshmallows on top (use your finger to press a little dent for the marshmallow.
  • Bake 11 - 12 minutes.
  • Allow the cookies to cool for 2 minutes and then transfer to a wire cooling rack. Enjoy!

Notes

*For Paleo Option: Use paleo-friendly chocolate chips or chopped up chocolate bars. And this homemade paleo marshmallow from one of my favorite bloggers, Laura.
*For Keto Option: Use Keto-Friendly Chocolate like this one.
Try to have the marshmallows inside or on top of the cookies. They will melt if they are touching the pan before baking. But it will be sticky and delicious still.
