Cottage Cheese Oat Pancakes {Blender}
There is nothing more comforting than a stack of fluffy pancakes. It gets even better when they are easy to make in just one blender using budget-friendly simple ingredients like rolled oats, bananas, and cottage cheese. To kick it up a notch, we are adding juicy blueberries for a burst of summer flavor.

Cottage cheese is such an underrated ingredient that you can add to any sweet or savory recipe. It adds moisture, creaminess, and extra protein.
As a result? These cottage cheese pancakes are soft, fluffy and yet a little creamy. You have all the texture in one bite.
Blender pancakes have been my favorite way to make pancakes since I became a busy mom of two toddler boys. It makes the process so easy.
All you need is to chuck all the ingredients in one blender, blend until smooth then use the batter for pancakes or waffles.

I highly recommend using full-fat cottage cheese for this recipe because it adds that extra creamy texture.
How to Make Blender Pancakes

What Else to Add to These Pancakes
There are so many variations to make blender pancakes more fun.
Here are some of my favorites:
- Banana Chunks
- Chocolate Chips
- Strawberries, Raspberries
- Walnuts
You can either add them as toppings or fold into the pancake batters.

Freeze The Pancakes To Save Those Busy Mornings
These oat pancakes are perfectly freezer-friendly. In fact, I always make double the batch so I can freeze them for a delicious make-ahead breakfast.
First, make sure they are cooled completely before freezing. This prevents them from sticking together.
Then, you can either place a piece of parchment paper or wax paper between the pancakes or freeze them individually on a big baking sheet.
Once they are frozen into individual piece of pancakes, you can put all of them in a big freezer storage bag
To reheat the pancakes, the fastest way is to microwave 20 – 30 seconds per pancake. Sometimes this method could make them rubbery if you overheat the pancakes.
I like to finish them in a toaster or over the pan. Heat a little bit of butter on a non-sticky pan until melty, place the pancake on, and cook over medium to low heat until heated through.

Notes
The Nutrition Facts above are specific to the ingredients I chose to use for this recipe, which may vary.
Hi! Mine would not cook through the middle and the batter was pretty thin. Also is it baking soda or baking powder? One part of the recipe says soda and the other says powder. Thanks!
Hi Lucy,
So sorry for the confusion, we have gone ahead and updated the post. It is baking soda that is needed.
The pancakes will be moist still, but 3-4 minutes per side or until fully golden, and they should be good! You could always make smaller pancakes also!
Hope this helps 🙂

I followed the recipe but added 1 scoop of vanilla protein powder for extra protein. With that said, the batter was too mushy and never really hardened to give me the pancake consistency. I was hopeful on this one, but bummed it didn’t work out how I had hoped. Thank you for sharing.
Do you have any nutritional information on these?
Nutrition info?

Hi, I liked it! However, I do not see the nutrition facts. I made a mistake and added the blueberries to the blender but still came out great!
Hi Kiona!
We are so happy you enjoyed these! You can get anywhere from about 5-10 depending on the size of the pancakes you make!
Hope this helps 🙂

Has anyone used protein powder in the batter? If so I assume more milk would be needed?
Hi Dana!
If using a scoop of protein powder, maybe add an additional 1-2tbsp of milk or liquid until you reach desired consistency.
Hope this helps!

Approx how many pancakes does this make? And do you have nutrition info? Looks amazing!
Hi Megan,
This will make 5-6 larger pancakes or closer to 10 smaller ones.
Happy Baking!

Loved this recipe!! So delicious! Wondering how to sub the oats for almond flour – would it be the same quantity?
Hi Ivanna,
Based on a quick google search, you can substitute for a 1:1 ratio. We haven’t tried this substitute out yet, but if you do let us know how it turns out!
Happy Baking!

These pancakes were out of this world delicious! The batter was a little thick so I blended half of my blueberries in and then stirred the rest in with a spoon! I can’t wait to make other versions! Thanks so much for all your delicious recipes!! ❤️
Hi Lisa!
We are so happy you loved these! As always if the batter is a little too thick, feel free to add a splash of water or milk to reach your desired consistency!
Happy Cooking 🙂

This looks amazing and can’t wait try! Wondering if it would still work if I replace the cottage cheese with high protein Greek yogurt?
Hi Paula!
Yes, of course, you could use any yogurt you have on hand- greek, normal, or even dairy free!
Happy Cooking 🙂
