There is nothing more comforting than a stack of fluffy pancakes. It gets even better when they are easy to make in just one blender using budget-friendly simple ingredients like rolled oats, bananas, and cottage cheese. To kick it up a notch, we are adding juicy blueberries for a burst of summer flavor.

Cottage cheese is such an underrated ingredient that you can add to any sweet or savory recipe. It adds moisture, creaminess, and extra protein.

As a result? These cottage cheese pancakes are soft, fluffy and yet a little creamy. You have all the texture in one bite.

Blender pancakes have been my favorite way to make pancakes since I became a busy mom of two toddler boys. It makes the process so easy.

All you need is to chuck all the ingredients in one blender, blend until smooth then use the batter for pancakes or waffles.

Ingredients for Cottage Cheese Oat Pancakes

Rolled Oats: You can use gluten free or regular rolled oats. Quick oats will also work for this recipe. However, steel cut oats can not be used here.

Cottage Cheese is used in place of milk here. It adds moisture to the pancakes as well.

Ripe Banana: I love mixing in ripe bananas in many sweet recipe as a fruit sweetener. It also adds moisture and a little bit gooeyness to the pancakes.

An Egg gives the pancakes a little extra fluffy texture.

Baking Soda is the rising agent that gives the lift for the pancakes.

Blueberries give that juicy bursting summer flavor. You can use frozen or fresh blueberries. If you choose to use frozen ones, you could drain them first. Otherwise, the extra liquid in them may create this gap around the berries once they are cooked.

Optional Ingredients:

Vanilla Extract pairs great with berries. So i always love to give a little splash to complement the blueberry flavors.

Maple Syrup can be drizzled on afterwards but if you prefer sweeter pancakes, you can also add extra maple syrup in the pancake batter.

What Type of Cottage Cheese to Use

Cottage cheese isn’t just for snacks. Have you seen all the viral cottage cheese recipes like cottage cheese ice cream, cottage cheese wrap, or adding cottage cheese to eggs for an egg bake?

There are so many ways you can use cottage cheese, even if you are a cottage cheese hater. You won’t even taste the cottage cheese for most of these recipes like these oat pancakes.

There are usually 3 types of cottage cheese that can be found in local grocery stores:

  1. Small Curd
  2. Large Curd
  3. Creamy Cottage Cheese

Since we are using a blender, it doesn’t matter which type you choose. We will blend it right up anyway.

Additionally, cottage cheese comes in a few variations: fat free, low fat and full-fat.

I highly recommend using full-fat cottage cheese for this recipe because it adds that extra creamy texture.

Do I need to strain the cottage cheese?

Although I like straining the cottage cheese for ice cream recipes, but you won’t need to for this recipe. Because the cottage cheese is replacing milk which adds moisture to the pancakes.

What Else to Add to These Pancakes

There are so many variations to make blender pancakes more fun.

Here are some of my favorites:

  1. Banana Chunks
  2. Chocolate Chips
  3. Strawberries, Raspberries
  4. Walnuts

You can either add them as toppings or fold into the pancake batters.

Freeze The Pancakes for Meal Prep

These oat pancakes are perfectly freezer-friendly. In fact, I always make double the batch so I can freeze them for a delicious make-ahead breakfast.

First, make sure they are cooled completely before freezing. This prevents them from sticking together.

Then, you can either place a piece of parchment paper or wax paper between the pancakes or freeze them individually on a big baking sheet.

Once they are frozen into individual piece of pancakes, you can put all of them in a big freezer storage bag

To reheat the pancakes, the fastest way is to microwave 20 – 30 seconds per pancake. Sometimes this method could make them rubbery if you overheat the pancakes.

I like to finish them in a toaster or over the pan. Heat a little bit of butter on a non-sticky pan until melty, place the pancake on, and cook over medium to low heat until heated through.

Ingredients

  • 1 cup gf rolled oats
  • 1 medium ripe banana
  • 1 egg
  • 1 cup cottage cheese, full fat
  • 2 tsp baking powder
  • 1 cup blueberries
  • 1 tsp vanilla extract, optional

Instructions 

  • Begin by preparing all ingredients.
  • In a blender, add in the oats, cottage cheese, egg, bananas, vanilla, baking powder. Blend until completely smooth.
  • Next, fold in blueberries.
  • Now heat up your medium sized skillet, with some oil or butter.
  • Scoop the pancake batter into the pan and cook for 2-3 minutes on each side, or until golden brown.
  • Top with butter, whipped cream, greek yogurt, syrup, or whatever you like best, and enjoy!

Notes

The pancake batter will get thicker once it is blended if you do not cook them immediately. If it gets too thick, you can add a little bit more milk (up to 1/2 cup total) to loosen the batter before cooking.
