They are made with rolled oats, apple sauce and packed with goodies like shredded carrots, walnuts, and raisins.

Filled with warm spices like cinnamon and nutmeg, these carrot pancakes just scream a nice cozy and lazy Sunday morning. They are fluffy gooey and have the little crunchy surprise goodies in every bite.

How To Store Your Carrot Cake Pancakes

These pancakes will store well in an airtight container in the fridge for up to 5 days.

They also freeze very well so you can easily double the recipe and meal prep a bunch ahead of time.

They pull apart quite easily from the freezer, so it is unnecessary to wrap all the pancakes separately before freezing.

When you are ready to eat them, you can heat them over stove top, microwave them, or pop it in your toaster.

  • 1 cup gf rolled oats
  • 1/2 cup shredded carrot
  • 1 tsp vanilla extract
  • 1/2 cup applesauce
  • 2 tbsp apple cider vinegar
  • 1/2 cup milk of choice
  • 1 tsp baking powder
  • 1/4 cup walnuts
  • 1/4 cup raisins

Carrot Cake Spice

  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger


  • Begin by preparing all ingredients.
  • In a blender, add in the oats, milk, applesauce, vanilla, vinegar, baking powder, and spices. Blend until completely smooth.
  • Next, add in the carrots, walnuts, and raisins. Pulse a couple time to combine. You can also fold in with a spatula.
  • Now, heat up a medium sized skillet, with some oil or butter.
  • Scoop the pancake batter into the pan and cook for 2-3 minutes on each side, or until golden brown.
