I used to think I was doing the baked chicken breast justice to cover it in order to trap the moist in. But it is the complete opposite. By covering the chicken you actually start a “steaming” process, which leads to rubbery and dry chicken meat.
Thirdly, let the chicken breast rest before cutting it up.

There are so many ways you can season chicken breast. It is like a blank canvas.
In this healthy recipe, I will share one of my favorites – Rosemary, Garlic, and Lemon.

Ingredients for the best oven baked chicken breast
- Chopped fresh rosemary
- Chopped fresh garlic
- Onion Powder
- Salt and pepper
- Chicken Breast
- Arrowroot Flour
- Avocado oil
Avocado oil has a high smoking point. Since we are going to roast the chicken breast at a very high temperature in the oven, you certainly do not want your smoke alarm to go off. Any other oil with a high smoking point will work as well.
First, chop rosemary and garlic finely, then mix with the dry spices.
Second, in a mixing bowl, combine 2 lbs chicken breast, avocado oil, seasoning, and arrowroot starch.
Third, mix everything with your hands until well combined.
Then, in an avocado oil greased pan, line up the chicken breast. Squeeze half a lemon on top.
Bake 450 F for 12 – 18 minutes depending on the thickness and the amount of chicken you are using.
Last but not least, let the roasted chicken sit for at least 10 minutes before cutting into it.
Why adding Arrowroot Starch to Oven Baked Chicken Breast
I learned this trick from my dad, who is the best cook in my family. He always mixes in a little bit of starch when seasoning protein. Starches help to trap in the moist.
