I love making this chicken when I’m meal-prepping for the week. With this oven-baked chicken already made, I could whip up a healthy lunch or dinner in 5 minutes.
For example, add some sliced chicken breast on top of your favorite salad, or put it between two slices of bread, add a few fresh tomatoes and some lettuce to make a quick sandwich, or pair it with some rice and sautéed veggies for a healthy dinner that will please the whole family.
Easy Oven Baked Chicken Breast
Oven Baked Chicken is so easy to make. I have been making it almost every Sunday for meal prep for as long as I can remember.
Because all you need to do is mix the chicken with oil and seasoning in a bowl, bake and enjoy.
However, for a while, I was doing it all wrong.
In fact, it is very easy to overcook the chicken breast, which could result in rubbery or dried-out meat.
So, these are a few things I have learned from my own mistakes.
First, bake the chicken breast at a high temperature, above 400F.
Secondly, don’t cover the oven-baked chicken breast.
I used to think I was doing the baked chicken breast justice to cover it in order to trap the moist in. But it is the complete opposite. By covering the chicken you actually start a “steaming” process, which leads to rubbery and dry chicken meat.
Thirdly, let the chicken breast rest before cutting it up.
How to Make the Best Oven Baked Chicken Breast
There are so many ways you can season chicken breast. It is like a blank canvas.
In this healthy recipe, I will share one of my favorites – Rosemary, Garlic, and Lemon.
And also because my husband has proudly harvested some fresh and fragrant rosemary from our little herb garden. Thanks, Tom!
Ingredients for the best oven baked chicken breast
- Chopped fresh rosemary
- Chopped fresh garlic
- Lemon
- Onion Powder
- Paprika
- Salt and pepper
- Chicken Breast
- Arrowroot Flour
- Avocado oil
Avocado oil has a high smoking point. Since we are going to roast the chicken breast at a very high temperature in the oven, you certainly do not want your smoke alarm to go off. Any other oil with a high smoking point will work as well.
Step-by-step instructions
First, chop rosemary and garlic finely, then mix with the dry spices.
Second, in a mixing bowl, combine 2 lbs chicken breast, avocado oil, seasoning, and arrowroot starch.
Third, mix everything with your hands until well combined.
Then, in an avocado oil greased pan, line up the chicken breast. Squeeze half a lemon on top.
Bake 450 F for 12 – 18 minutes depending on the thickness and the amount of chicken you are using.
Last but not least, let the roasted chicken sit for at least 10 minutes before cutting into it.
Why adding Arrowroot Starch to Oven Baked Chicken Breast
I learned this trick from my dad, who is the best cook in my family. He always mixes in a little bit of starch when seasoning protein. Starches help to trap in the moist.
This is especially important when it comes to chicken breast since it’s so low in fat and therefore tends to dry out so easily. Mixing in a little starch really helps to develop that juicy and tender texture.
You can also use corn starch or tapioca flour.
What Temperature to Bake the Chicken Breast
Like I said, I learned from my own mistakes over the years of making oven-baked chicken breast.
And I have discovered that you will get the best result if you cook the chicken at
425 F – 450 F.
Roasting chicken breast at a high temperature gives the meat a crispy crust on the outside, and juicy moist meat on the inside.
Depending on the thickness of the chicken breast you are cooking, baking at 450 F only requires 12 – 18 minutes.
Tip: For me, 15 minutes are always a safe option for the average store-bought chicken breasts. You could also use a cooking thermometer to test the inside of the chicken breast. It should be around 160 – 165 F.

First, make sure the chicken is completely cooled down. Then, transfer it into an airtight container and refrigerate it for up to 4 days.
Can I Freeze Oven Baked Chicken?
Absolutely!
You can double the batch and freeze it in an airtight container or freezer bag.
When you are ready to enjoy, simply take the desired amount of oven-baked chicken breast out of the freezer the night before to let it thaw. Then, microwave or pan sear it before serving.

Ingredients
- 2 lbs 4 pieces chicken breast (boneless and skinless)
- 3 tbsp [avocado oil]
- 2 tbsp arrowroot starch
- 1 tbsp freshly chopped rosemary
- 2 cloves minced garlic
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 lemon
Instructions
- Chop the rosemary and garlic into small pieces. Leave a few bunches of rosemary for decoration.
- In a mixing bowl, combine 2 lbs of chicken breast, avocado oil, onion powder, paprika, salt, pepper, and arrowroot starch. Mix everything with hands until well combined. It should feel slightly floury on the outside of the chicken breast.
- Grease a baking pan with avocado oil. Line up the chicken breast. Squeeze half a lemon on top.
- Bake 450 F for 15 minutes, or until inner temperature reaches 160-165 F.
- Let the roasted chicken sit for at least 10 minutes before cutting.

I used olive oil for the chicken due to an avocado sensitivity and baked the chicken in coconut oil. The breasts were large, so I cooked them at 425 for 15 on each side.
