Easy Bolognese Sauce {For Busy Moms}
Did you know that Bolognese sauce is actually super easy to make on a busy weeknight? The veggies practically melt into the sauce, adding richness and nutrition without anyone noticing. Served over spaghetti squash or your favorite pasta, it’s hearty, comforting, and tastes like it has been simmering all day long. Perfect for those nights when everyone is hungry and you need dinner on the table fast.

I’ve experimented with so many different versions over the years, and this is the one I keep coming back to. This busy mom simplified version is loaded with layers of flavor, protein, and hidden vegetables, making it one of my favorite shortcuts for getting a wholesome dinner on the table.
I know Bolognese sauce is a comfort food that many of you grew up with. For my husband, it was one of his mom’s dependable weeknight dinners—a meal she could always count on when time was short and hungry kids were waiting.
Inspired by those family dinners, I created my own version that’s loaded with vegetables without sacrificing any of the rich, hearty flavor that makes Bolognese so comforting. The vegetables cook down into the sauce, adding natural sweetness and depth while blending seamlessly into the meat. Even picky eaters rarely notice they’re there.
Even better, this recipe uses just a handful of accessible ingredients and is easy to make ahead. I often double the batch and freeze half for those extra chaotic weeks when cooking dinner feels impossible.

How to Serve Easy Bolognese Sauce
One of my favorite things about this recipe is how versatile it is.
While traditional pasta is always a great option, I often serve it over spaghetti squash. The slightly sweet squash pairs beautifully with the rich meat sauce and adds an extra serving of vegetables to the meal.
You can also serve this Bolognese sauce with:
- Any shape of your favorite pasta! My kids’ recent favorites are these dinosaur-shaped ones.
- Rigatoni
- Penne
- Pappardelle
- Gluten-free pasta
- Zucchini noodles

Ingredients
- 1 lb ground beef *
- 1 small shallot, chopped
- 1 jar 24 oz marinara sauce
- 2 celery stalk, chopped
- 2 large carrot, chopped
- Salt and pepper to taste
- 2 – 3 tbsp olive oil
- 2 pieces bay leaves, optional **
- 1 handful fresh basil, optional
- 1/4 cup parmesan cheese, optional

Instructions
- In a large skillet, heat 1 tbsp of neutral cooking oil, add in the ground beef, season with salt (about 1/2 tsp) and pepper (a few shakes).
- Cook the beef until browned, breaking it into small pieces as it cooks. Drain the grease and transfer the ground beef pieces onto a piece of paper towel. ***
- Return to the same skillet (wipe off additional grease if needed). Over medium heat 2 tbsp neutral cooking oil, after 1 minute or so, add, chopped shallots, celery, and carrots.
- Continue to stir to prevent any burning, until fragrant, and the carrots and celery are softened.
- Add the ground beef back in, along with marinara sauce and bay leaves. Lower the heat and stir until the meat and vegetables are completely coated with the sauce. TASTE and season with extra salt and pepper accordingly.
- Let it simmer for approximately 10 – 15 minutes or until the sauce is well combined and thick.
- Serve over prepared spaghetti squash, zucchini noodles or your favorite traditional pasta.
