1. First, begin by mixing the oats, peanut butter*, walnuts/pecan, raisins, orange juice**, and coconut into one bowl.
2. Optionally add the diced apples and shredded carrots.
4. Scoop the cookie dough balls into a cookie shape.
5. Drizzle the cookies with more peanut butter on top and enjoy.
Notes
*I used peanut butter sweetened with monk fruit. If you are using unsweetened peanut butter, add 1/2 to 1 cup of peanut butter depending on your preference**if the batter is too crumbly add more orange juice 1 tbsp at a time
