Soak raw cashews in hot water for 2 hours (or overnight). Rinse and drain well (there is no water dripping from the cashews before using).
In a food processor, pulse together soaked and rinsed cashews and pitted Medjool dates and a pinch sea salt. Blend until smooth and doughy. (It should appear to be a bit wet and sticky)
Blend in coconut flour or pea protein powder. I usually need about 1/4 cup (add additional 2-3 tbsp if the batter still seem to be runny).
Once everything is well combined. Fold in the chocolate chips.
Lastly, press the no bake cookie dough into a parchment paper-lined 8×4 pan. Add more chocolate chips and sprinkle of sea salt on top.
