Add the ripe bananas to a mixing bowl and mash them up ***
Add Greek yogurt and honey. Stir until well combined.
Optional: Swirl a little peanut butter into each popsicle mold.
Pour the yogurt mixture into popsicle molds and insert popsicle sticks.
Freeze overnight, or until completely solid.
Add chocolate chips and coconut oil or peanut butter to a microwave-safe bowl.
Microwave in 20-second intervals, stirring in between, until melted and smooth.
Let the chocolate cool slightly.
Remove the frozen yogurt bars from the molds and dip each bar into the melted chocolate.
Quickly sprinkle crushed peanuts on top before the chocolate shell hardens.
Place the bars on a parchment-lined baking sheet and freeze again until fully set.
Enjoy straight from the freezer.

*optional: Straining Greek yogurt or cottage cheese can make the ice cream texture more creamy and thick. You can do so using a cheese cloth mesh or a few layers of paper towel.**Mixing chocolate with peanut butter or coconut oil can reduce cracking once they firm up.** *Leave the bananas chunky or smooth, your choice!
