Make the homemade Pie Crust recipe Here., or you can use any of your favorite store-bought pie crust.
Broil the bacon on a broiling pan for 5 minutes. Place cooked bacon on a piece of paper towel. (Or you can cook the bacon your preferred way)
Preheat the oven to 400 F.
Chop the onion, broccoli into small florets, and bell pepper into small cubes. Then roughly chop the bacon into pieces.
Roast broccoli in the oven with 1 1/2 tbsp melted ghee and a sprinkle of sea salt for 10 - 12 minutes or until slightly crispy on top. In the meantime, in a medium skillet, heat 1/ 1/2 tbsp ghee (or use the bacon fat) and sauté bell pepper and onion for 3 - 4 minutes or until soft.
In a medium mixing bowl, whisk together 7 large eggs, coconut milk, salt and pepper.
Spread the roasted veggies and bacon pieces on the bottom of the prepared pie crust (9-inch) and pour the egg mixture over. Spread a layer of cheese on top (if using any).
Bake 400 F for 23 - 25 minutes or until the center is set.
