These fluffy Pumpkin Oat Flour Waffles are made with pumpkin puree, oat flour, almond flour, and warm fall spices. They’re easy to make, lightly sweetened with maple syrup, and perfect for a cozy fall breakfast the whole family can enjoy.
In one bowl, whisk together the oat flour, almond flour, baking powder, pumpkin pie spice, cinnamon, and salt.
In another bowl, whisk the eggs, pumpkin puree, milk, maple syrup, melted coconut oil (or butter), and vanilla.
Stir the wet ingredients into the dry until just combined.
Let the batter rest for 5–10 minutes so the oat flour can hydrate. It should be thick but easily scoopable/pourable. If it becomes too thick, mix in milk 1 tablespoon at a time.
Cook according to your waffle maker's instructions until the outside is golden and releases easily (If your waffle iron has an indicator light, let it cook a little bit longer once the light goes off)
Add your favorite toppings and enjoy!
Notes
The pumpkin puree adds additional moisture. When the waffle is done (indicator lights goes off), the outside of the waffle should be slightly crispy to touch. If not, I reccomend letting it cook a couple minutes longer.
