These Pumpkin Energy Balls are soft, fudgy, and filled with cozy fall flavor. Made with just 6 ingredients, no baking required, they’re the perfect freezer-friendly snack for busy moms, toddlers, and husbands alike.
In a bowl, mix together peanut butter, pumpkin puree, maple syrup until smooth.
Stir in oats, pumpkin spice and mix-ins until evenly combined.
Chill the mixture in the fridge for 15–20 minutes for easy rolling.
Roll into 12–14 balls. Store in the fridge for 1 week or freezer for up to 3 months.

* Use smooth and preferably drizzly peanut butter. If the peanut butter has been refrigerated or very thick, mix it with maple syrup/honey and microwave it for 15 - 20 secs or until smooth.
** The ground flax seeds and chia seeds both absorb liquid. If the dough gets too dry or crumbly, add 2 -3 tablespoons of nut milk.
