Instructions
Soak pecans in hot water with a pinch of salt for 4+ hours or overnight
Rinse and drain well.
Blend the pecans, a pinch of salt, and pitted dates until smooth or desired texture. If the batter is too wet/gooey, you can add 2 - 3tbsp coconut flour.
Blend, cover, and refrigerate for a couple of hours – this makes rolling SO much easier!
Roll the dough into spheres and add crushed pecans if you so desire.
Freeze and enjoy!

*If you add whey, plant-based, or other proteins then the texture may vary (it could make it more dense/dry)
