Add dates, walnuts, cacao powder (save 1 – 2 tbsp of cacao powder for dusting), and nut butter (optional, I like almond or peanut butter ) to a food processor or a high-speed blender and blend until smooth and doughy. (scrape the blender wall with a spatula or butter knife a few times to make sure all the pieces are blended up).
Place the brownie batter in the fridge to cool for 20 minutes. This step will make the brownie bites easier to roll.
Roll the no bake brownie batter into balls. (Wet your hands before rolling to prevent the batter sticking to your hands).
Roll the balls in the remaining cacao powder.
Store in the freezer.
