Crispy Dumpling Bites (Tortilla Pinwheels, No Folding)
These crispy dumpling bites are made with juicy, savory dumpling filling spread onto flour tortillas, rolled into pinwheels, and pan-seared until golden and crispy. They're an easy twist on traditional Chinese dumplings without the hassle of folding individual wrappers. Serve with sriracha mayo, dumpling dipping sauce, or chili crisp!

In a large bowl, mix the ground pork, Shaoxing wine, ginger, green onions, coconut aminos or soy sauce, sesame oil, and salt until the filling looks slightly sticky.
Place a flour tortilla on a flat surface. Spread 2–3 tablespoons (a thin layer) of dumpling filling evenly over the tortilla in a thin layer, leaving a small border around the edges.*
If using cheese (optional), sprinkle a thin layer of shredded cheese over the filling.
Starting from one edge, roll the tortilla into a tight log. Repeat with the remaining tortillas and filling.
Preheat the oven to 350°F. Place the rolled tortillas on a baking sheet and bake for 10 minutes to help set the filling and make the rolls easier to slice.**
Remove the rolls from the oven and let cool slightly. Using a sharp knife, cut each tortilla roll into bite-sized pinwheels, approximately 1 inch thick.
Heat a lightly greased nonstick skillet over medium heat. Place the dumpling bites cut-side down and sear for about 2 minutes, or until golden brown. Flip and cook the other side until crispy and the filling is fully cooked (160°F in the center).
Enjoy warm with sriracha mayo, dumpling dipping sauce, or your favorite chili crisp.
Notes
*Adjust the amount of dumpling filling based on the size of the tortilla you are using. Too much filling will overflow when you roll up the tortilla. **Baking the dumpling rolls help to set them and make cutting easier and cleaner. It also shortens the time to sear them in the pan. *** For the batch in the photos, I mixed finely chopped Chinese chives (韭菜) into the filling. Minced cabbage, mushrooms, or carrots also work.
