1-2thick piece of sourdough toastor your preferred kind of bread
Butter or coconut oil for greasing
¼cupfull or reduced fat plain yogurt *
½tspvanilla extract *
1egg
2tbspcoconut sugar
¾tspground cinnamon
Icing
3tbsppowdered sugar
1tspmilk of choice **
Pecans and a pinch of salt on topoptional
Instructions
Start with rubbing butter on both sides of the toast or spray coconut oil on both sides of the toast.
Gently press down the center of the toast using your hands or a spoon to make a dent to put the custard in. If your bread is not fresh and squishy, you can scrape the crumbs out instead of pressing it down. Just make sure not to break the bottom.
In a small bowl, whisk together the egg, yogurt, vanilla extract, sugar, and cinnamon to make the custard.
Add the custard mixture to the dent in the bread.
Spray the air fryer basket with cooking spray (or line or grease a cooking tray) and place the cinnamon roll custard toast on top.
Cook the yogurt toast in the air fryer at 350 F for 10 minutes or bake in the oven at 350 F for 10-12 min until the custard has set and the center is no longer jiggling.
While the toast is cooking make the icing by mixing the powdered sugar and milk together in a small bowl. Whisk the icing until it’s smooth.
Remove the toast from the air fryer/oven and drizzle with the homemade icing.
Sprinkle additional cinnamon, crushed pecans, and flakey salt (optional) on top of the toast.
Notes
*You can use vanilla yogurt instead of plain+vanilla extract, simply omit the vanilla extract and adjust the coconut sugar to taste.**add more milk if you prefer a more drizzly icing.
