These buffalo chicken meatballs are so juicy and tender, smothered in a slightly spicy buffalo sauce. They are easy to make and only take less than 15 minutes to bake. They are the perfect game day appetizer or make a great fun weeknight dinner.
In a medium-sized mixing bowl, thoroughly mix ground chicken or turkey with buffalo sauce, arrowroot flour, egg, chopped yellow onion, garlic powder, and salt & pepper to taste.
Cover meatball mixture and refrigerate for 20 minutes or overnight for best results.
Roll into golf-sized balls; makes about 12-16 meatballs depending on how large you make them.
Bake 10-11 minutes or until the internal temp reaches 165 F.
In a large bowl, toss meatballs in buffalo sauce. Or toss in a pan and warm it up on low heat for 5 minutes.
Drizzle ranch over meatballs, garnish with green onion and/or blue cheese crumbles if desired.
Notes
* The buffalo sauce itself is usually pretty salty so be sure to take this into consideration when you’re adding salt.
Make sure your oven has reached 400 F (it usually reaches the target temp 10 minutes after beeping). I recommend using an oven thermometer
