Cut potatoes into wedges. Soak in water for an hour or overnight*
Drain and rinse then toss the potatoes, oil and seasoning in a bowl until the potatoes are well coated.
Place the potato wedges in the basket of the air fryer. Make sure not to overcrowd the basket. (I usually do 1 – 2 layers)
Cook in the air fryer at 400 F for 10 minutes, then shake the basket a couple times to flip the potato wedges then cook for an additional 8 – 10 minutes.
