NO BAKE PUMPKIN CHEESECAKE

This 6 ingredient No Bake Pumpkin Cheesecake is the perfect holiday dessert! It's easy to make and is paleo, vegan and gluten-free.

– Raw Cashews – Medjool Dates – Pumpkin Puree – Coconut Flour – Pumpkin Spice – Raw Almonds

INGREDIENTS:

Soak cashews with a pinch of salt in room temperature water overnight, or in hot water for 2 hours. Rinse and drain. Set aside.

STEP 1

PIE CRUST Start by making the pie crust. Mix the almonds and pitted dates in a high-speed mixer.

STEP 2

When the almonds have broken up into smaller pieces, transfer to a food processor.

STEP 3

Add pitted Medjool dates to the food processor. Pulse until the texture is gooey and well combined.
