– cashews – medjool dates – flour – chocolate chips – sea salt
Soak raw cashews overnight with a pinch of salt (or soak in hot water for 2 hours). Drain and rinse.
In a food processor, pulse together soaked and rinsed cashews and pitted Medjool dates and a pinch sea salt. Blend until smooth and doughy.
Blend in coconut flour. I usually need about 1/4 cup (add additional 2-3 tbsp if the batter still seem to be runny).
Next, fold in mini chocolate chips.
