HEALTHY OVEN  BAKED EGGPLANT  PARMESAN

A meal with marinara sauce cheese is usually associated with heavy ingredients like pasta and spaghetti, but this Oven Baked Eggplant Parmesan is made with wholesome and healthy ingredients – the ultimate healthy comfort food.

INGREDIENTS

– Large eggplant – Bread crumbs ** – Large egg (beaten) – Olive oil – Finely grated parmesan cheese  – Italian Seasoning – Salt Pepper to Taste – Marinara Sauce – Fresh basil (Optional)

In a medium shallow dish, beat egg and olive oil together.
