Mix together maple syrup, apple pie spice, lemon juice, and arrowroot flour. Whisk until there are no clumps left. Now, add the apples to the maple syrup mixture and stir well. Bring the apple maple mix to a boil and turn the heat down to low.
Whisk together almond flour, coconut flour, baking soda, and a pinch of salt in a medium bowl. Then, in a separate bowl, combine almond butter, melted and cooled vegan butter, and maple syrup. Now, gently combine the wet and dry ingredients using a spatula.
Evenly press 2/3 of the gluten-free pie crust dough into the baking dish. Pour the apple pie filling on top of the crust and spread it out evenly. Use your hands to form various shaped crumbles of the remaining dough and spread it on top of the apple pie filling.
